If you are looking for something yummy and pumpkin-y but not pie, try this very easy recipe from Libby's. I heard about it from my friend Colleen (hi Colleen!), and found the recipe on the Libby's pumpkin can wrapper. It's also on their website. It's very light, very tasty, and looks quite amazing. The only added fat is the cream cheese frosting filling (mmm, cream cheese frosting, mmm). I tried it out last week and Marc and Maddy couldn't get enough of it. It was a big hit.

That looks really good! Now, was that the one you actually made? It looks absolutely perfect! It sounds really good too...I wonder if I could modify the cream cheese part somehow...Chad doesn't like cream cheese.
Honestly, I'm really looking forward to the Thanksgiving food more than the dessert. How crazy is that? I think it's because I'm a complete chocolate freak and usually for Thanksgiving dessert we have pumpkin pie, apple pie, mincemeat pie, pecan pie...every kind of pie...but they're kind of overrated to me. I feel bad admitting that. If I had to pick one of those I would say pumpkin pie. I feel like a Thanksgiving dessert scrooge now...

Ooohhh. You made our favorite desert of all time. We LOVE Pumpkin Roll. However I was stressed over getting the house ready for a holiday tour and so didn't take time to make it this year. We all enjoyed my mom's pumpkin pie instead. I am thankful and blessed to have a mom who still enjoys making pies.
Patrick & Lindsey had 23 guests and Lindsey made Pumpkin Roll for all. Way to go Lindsey!
