Strawberry Fields Forever


I spotted some strawberries at our local grocery store and thought that sounded like a nice fruit choice this week. I have picked some up from the salad bar lately, but this was a whole carton of them from somewhere in the USA (it had a sticker telling me so). I stuck them in the fridge and they sat there for a few days. When you get a whole carton, you feel like you must do something with the whole thing, not grab a berry or two for your yogurt, at that rate they will be moldy little nuggets I throw out some time in May. So I waited for a little inspiration. It came to me in the form of a look from Marc. I knew exactly what he was thinking.
Strawberry shortcake.
I found this recipe and made it for my sister-in-law Heidi's birthday last June. It was the most amazingly yummy, decadent, sweet AND slightly salty treat. It is made with real cream in the shortcake dough, and it is truly the very best, most amazing shortcake you will ever have. Did I say it was amazing? You must eat it right out of the oven, hot, with fresh strawberries and freshly whipped cream. Since we made it, baked it and ate it while Maddy was asleep in bed, I just used some Redi-Whip topping instead of whipping up the fresh cream. It's a pretty decent substitute. Lucky for me, two servings wiped me out and I don't think I can eat it again for, oh, a week at least. If you see some strawberries at the store, think of this recipe. Other than the cream, I bet you have the other ingredients sitting around. If you make it, let me know!

I saw some strawberries this week too, and I wondered if they would even be good this time of year. I guess I'll have to pick some up.

Yum! Looks great! I think we need a break from cheese bread so maybe I'll have to try the recipe. Don't you love to find recipes that are perfect? I like to make them over and over again and then Chad gets tired of it...but it's fun!
