A Beautiful Bounty

A family in our neighborhood is part of an organic farm co-op. This is such an interesting idea, I am fascinated by it. They purchase a seasonal subscription from a farm in the greater northern Illinois area. Calendonia, ever been there?

This particular farm is called Angelic Organics. They harvest whatever is ready that week and they deliver it to a number of pre-determined drop sites around the Chicagoland area. The families go pick up their box of fresh, locally grown, organic veggies. There is no picking and choosing, you get what you get and you don't get upset.

Our neighbors went out of town and asked us if we would like to enjoy the box of veggies while they were away. We simply had to pick them up at the drop spot.

Wow, were we blown away by the selection, quality, color, variety, flavors and quantity. We immediately decided that, while we loved the idea, it was way too much produce for us to eat in a week, therefore we would not be subscribers. We were given a little cheat sheet to help us identify a few things, and we were pleasantly surprised to find some lovely fresh herbs were included.

I made a cucumber salad with dill, a very hearty spaghetti with as many fresh veggies as I could manage to include, several lovely salads and I have used up about 85% of the stash. I am still trying to use the kale and beets but just haven't found the right dish yet. I'll have to search some of my favorite cooking sites to find a kale and/or beet recipe that excites me. If you have one, hit me with it please.

Tell me about some of the fresh veggie cooking you have been doing this summer!

(PS- I know you are wondering if I borrowed/stole that veggie picture from another site, but no, that is really what we got in the veggie box after Marc washed it all.)
(PPS- Yes, I am eating vegetables. Please pick yourself up off the floor, I am working at it and like some better than others so don't look at me like that. I don't think I will ever eat green beans, they make me gag.)
(PPPS- When I was a kid I always wondered when I extended my Post Scripts to more than one if it should be more P's or more S's, but now I realize it would be silly to have Post Script Script when we all can plainly see it should be Post Post Script, or PPS.)

Cool. I've known people who've done this - but they split their box with a neighbor for the reason you mention. Neither of their households could eat it all alone. Although I've rarely met a vegetable I don't like, kale is one that I've never developed a taste for. As for beets however, growing up with a Polish grandma meant they were a staple when I was growing up. Beets with sour cream or pickled beets were pretty much a given with every Sunday dinner. Unfortunately, I don't have her recipes. But I found this link http://easteuropeanfood.about.com/od/vegetables/tp/Top-5-Polish-Beet-Recipes.htm
These might be kinda out there if you've never been a beet eater, but let me know if you try any of them!

Since being pregnant I've had no desire to eat any vegetables. But those vegetables almost make me think I could eat veggies again.

Kathy I'm so proud of you for trying to eat veggies! I know that's a big step for you.

That's awesome! Our babysitter does this and she has given me the pamphlet from her place. We've thought about it but it's kind of pricey and you do get a ton of stuff!!! It's kind of a step further from Farmer's Markets and I love that!

Yes. I have picked myself up off the floor after reading you are actually eating some of the veggies. Welcome! We veggie lovers are always looking for great company.
Now that he is retired, Dwight tried his hand at vegetable gardening. The weeds were bountiful after returning from our vacation. But we do have corn in the freezer to last all winter, cinnamon pickles to give for Christmas gifts and just enough tomatoes for an occasional BLT.
